Can installing the wrong thermostat cause a car to suddenly run rough? - car thermostat installation

I have a 1986 Chrysler LeBaron, and usually runs just great, but today I've installed a thermostat to 180 degrees in it, like the old thermostat and the car was not too hot for work.

However, when I removed the old thermostat I noticed it was a sort of 195 degrees, and I board seems that it can not be wrong with 180 in the open heat of summer, so I installed the new unit of 180 degrees, who had already purchased.

When I tried the car shortly after installing the new thermostat and fresh coolant, the car seems to be rough for no other reason than I think it could be that the thermostat opening too quickly.

Am I right or not? Could the thermostat is in this case and the original vehicle conspicuously broken?
